A traditional Singaporean minced meat noodle dish that rivals the ones at the hawker centres, made with our Bamnut Charcoal Noodles.

Charcoal Noodles with 'Shroom Seasoning

Charcoal Noodles with Mushroom Pepper Sauce

Ingredients

1 BAMnut Noodle Charcoal
250ml pork broth
15g dried mushroom
1250ml water
1 tbsp soy sauce
1 tbsp fish sauce
1 tbsp black vinegar
1 tsp sugar
100g sliced pork
100g minced pork
1 ikan bilis stock cube
1 tsp sambal (to taste)
Fried shallots (optional)
Spring onions, chopped (optional)

Directions

In a pot, boil 500ml of water.
Once boiling, remove from heat and add in dried mushrooms. Let soak for 30 minutes to an hour.
Remove mushrooms from water, and set the water aside.
Slice the mushrooms.
For the sauce, measure out 100ml of the mushroom water, and combine with soy sauce, black vinegar, sugar and sambal if using. Mix till the sugar dissolves.
In a pot, boil the rest of the water with the pork broth and ikan bilis stock cube.
Once boiling, add the BAMnut Noodle Charcoal and cook for 2 minutes.
Then, add in sliced pork and cook for 1 minute.
After a minute, add in the minced pork and cook for an additional minute, then remove from heat.
Add 1 tablespoon of the broth into the sauce you’ve made.
To serve, strain the noodles and meat and mix with the sauce.
Garnish with spring onions and fried shallots (optional)
